Amish Peanut Brittle:

Ingredients:

1 c. brown sugar

1 c. molasses

1 c. water

1/8 tsp. salt

4 tbsp. butter

2 c. shelled peanuts

Here’s how you make the brittle. In a heavy saucepan combine the brown sugar, molasses, water and salt. Place over medium-high heat and cook to 280 ° F (use candy thermometer), stirring enough to prevent scorching. Stir in butter, then remove from heat and add peanuts. Pour mix onto greased stone slab or stoneware platter and allow to cool. After it has hardened and cooled, break into pieces and store in container with lid.
