Amish Fried Chicken

1/3 c. vegetable oil

1/3 c. butter

½ c. flour

½ c. bread crumbs

½ c. cornmeal

1 ½ tsp. paprika

1 tsp. salt

1 tsp. garlic salt

1 tsp. ground black pepper

4 pounds chicken, cut-up or 12 meaty pieces

Preheat the oven to 375°F. Place the oil and butter into a shallow baking pan and put in oven until the butter melts. Combine the flour, bread crumbs, cornmeal and spices into a large paper bag. Roll 4 pieces of chicken at a time into the oil-butter mixture, then place into paper bag and shake until coated. Remove pieces and place into the baking pan with the skin side down. Bake for 45 minutes, then flip and bake until top crust turns golden brown (five to ten minutes).
