Amish Dinner Rolls

Here’s a good, basic Amish bread recipe adapted to use with a bread machine, and which can be used to make dinner rolls.

Place these ingredients in the bread machine in the following order:

1 cup plus 2 tablespoons hot water

¼ cup oil

2 ¾ cups all-purpose flour

¼ cup granulated sugar

1 tsp. yeast

½ tsp salt.

Put the machine on dough cycle (check the owner’s manual), turn out on a floured surface when cycle is finished. Let dough rest for 15 minutes, knead three times, place in loaf pan (or form into dinner rolls). Cover with a cloth and let rise for one hour. Bake loaf in 375 degree oven for 30-35 minutes (rolls bake for approximately 20-25 minutes).

To form dinner rolls:

After dough has risen once, deflate with your fists. Use both hands to roll dough into a log. Use a serrated knife to divide the dough log into equal portions. Form dough into rounds and place on baking sheet (you might want to cover finished rolls with plastic wrap as you form the rest of the rolls to keep them from drying out). Once all rolls are formed, cover with clean towel and allow them to rise a second time (they should double in size). Bake as directed above.
